Written by a dedicated baker it explains to the reader why wholemeal breads are better for you, for the planet and the whole chain from farmer to consumer. It introduces the reader to ancient and modern Iranian breads and bread making. A warning though, the descriptions of the breads will make you want to seek out the many varieties of breads described as you can almost smell and taste them through the prose.
